Cheesy tomato deliciousness, if you have never tried this give it a go it is delicious
Ingredients
-
650g Ricotta
-
80g Spinach
-
6 Fresh Lasagna Sheets (found in the fridge section of your supermarket)
-
700g Passata
-
1/2 Tsp Onion Powder
-
1/2 Tsp Garlic Powder
-
1 Tsp Oregano
-
1/2 of a Lemon Juiced
-
Salt and Pepper to Taste
-
Grated Cheese for top (I use Mozzarella)
Directions
Preheat your oven to 180°C
Mix ricotta and spinach, you can chop the spinach to make it smaller for kids, I personally just mix it in to make it easier
Mix your passata, onion powder, garlic powder, oregano, lemon and a good amount salt & a bit of pepper together. You can omit the lemon if you don't like it in your sauces.
Spread a thin layer of sauce on the bottom of your baking dish this stops it sticking to the bottom without adding any oils etc. (my baking dish is 24.3cm x 24.3cm x 5cm in size)
Cut your lasagna sheets in half down the middle vertically on the short side
Pop about 2 tbsp of mixture onto one short edge of the lasagna sheet. Don't worry about measuring 2 exact tablespoons it's just a guide you can use your big spoons not a measuring spoon.
Roll from the side with the ricotta filling and roll up to to form a tube, roll it so it's nice and snug but don't squish to hard otherwise the lasagna sheet will break. Don't worry if you get any cracks the sauce will cover it
Place into the baking dish in the bottom corner right up against the edges of the side and bottom. Continue this step until all the mixture and lasagna sheets are used, place each tube next to each other you don't want gaps, let them be touching. If you need at the top switch directions of the tubes, again you won't see it you just want it full
Once full add your passata mixture all over the top and spread out so it's evenly distributed and is covering the lasagna sheets completely otherwise they will dry out
Cover in your favourite grated cheese, I use a mix of cheddar, parmigiano and pecorino. But honestly use whatever you have that you like, we just want nice melty delicious cheese on top so your fav melty cheese works a treat
Cook for 25 minutes or until cheese is melted and golden brown. Because we used fresh lasagna sheets they will be soft and cooked perfectly
Serve immediately with a simple side salad

How goods that 😍 perfect for a late night or one you know you’ll be home late It’s also amazing in the fridge & freezer 🙌🙌 Serve it with a fresh salad and you have the easiest dinner 🍽️ The lasagna sheets I use are the rana they are the best I’ve found and closest in ingredients to making it yourself 👌 they are in the fridge section in wollies and coles I prefer the freah sheets over the dried tubes you can get because you know by the time your cheese is all melty it’s done where as dried ones can still be hard in the center they just aren’t something I personally use. I also use the ricotta you saw in the big tubs you can see it’s thicker and not super smooth like some of the supermarket brands. They taste more like ricotta to me but you can use the others if you can’t find a big one. Recipe Note
- This also freezes wonderfully and you can even prep this in the morning, pop it in the fridge and pop it into the oven when you are ready for dinner, such a simple yet delicious dinner the whole family will enjoy
- If your kids are funny with spinach and won't eat it cause there is something green in it (totally normal) you can not add spinach on their tubes or chop a lesser amount super small so it's not as noticeable.
- I always use fresh lasagna sheets over the dried ones, you will find these in the fridge section near the ravioli etc (in Australia) because they cook quicker and you don't have to worry about them being undercooked or hard. I recommend the Rana Lasagna Sheets they taste nicer and have less added into them, but the other fresh ones work perfectly too and can be a bit cheaper.
- When you get to the top of your tray lay the tubes lengthwise and if you have a small gap just cut a tube in half and pop it in there. Once its covered in sauce and cheese you won't see what it looks likeIf you have leftover ricotta or lasagna sheets you may have just popped less or more into each sheet, you can just make some extra or freeze the sheets for next time
- This will serve about 5 people but you can serve more if you cut the serving sizes smaller. If you need more serves just double the recipe and use a bigger baking tray, just always make sure the lasagna sheets are covered in sauce so you don't end up with dry cannelloni
- This will last in the freezer for up to 3 months, a good tip is to cut it into portion sizes and pop in the freezer instead of as a whole so you can get 1 out if you need. It's a great lunch for all you busy Mums, just add a salad or cut up veggies and you have a great easy lunch
