Inspired by the classic Nando’s flavour using their spice rubs available in supermarkets, this peri peri chicken tray bake is spicy, juicy, and all done in one pan perfect for busy nights.

If you are looking for an easy dinner this is it! I love a tray bake, they taste delicious but are also super simple to make, making them a great busy weeknight dinner. And for easy flavour the Nandos Peri Peri rub makes a great easy option

Ingredients
-
2 Zuchhini’s
-
2 Carrots
-
½ A sweet potato
-
½ Fennel Sliced
-
½ Capsicum
-
¼ Of Pumpkin*
-
4 Potatoes
-
2 Large Chicken Breast of 4 Small Chicken thighs
-
1 Lemon Juiced & Keep the skins
-
1 tbs of Olive Oil
Directions
- 🧡 Preheat oven to 200C
🧡 Chop your veggies into ¼ Pieces, cut the zucchini, carrot, capsicum and fennel etc length ways. Cut the potatoes and sweet potato into small ¼ pieces
🧡 Coat your veggies in a good dash olive oil, and squeeze the lemon all over & sprinkle the rub over giving it a good mix
🧡 Do the same to your chicken and place on top and add the lemon skins into the tray
🧡 Covered the tray in foil because i found last time the Nandos Rub burnt a little quicker so covering it helps cook but not burn
- 🧡 Give your veggies a mix half way and take off the foil around this point, if it browns to quickly pop the foil back on
🧡 Cook away for 45mins-1hr this will depend how much is in your tray, I have a really bad habbit of overfilling mine so don’t do what I do 😅.
🧡 If your Chicken is cooked but you want extra colour on the veggies simply take the chicken out, pop onto a plate and cover with the foil. Pop your veggies back in to cook a bit more

@_ashleysplace_ EP 3: Come Cook with me We are making dinner and making a Tray Bake 😋😋 This is my go to when I want something simple but still delicious 😋 and we are testing out the @nandosaus peri peri rub for this one to switch it up So how do you make it: 🧡 Preheat oven to 200C 🧡 Pick your veggies I do potatoes, pumpkin, sweet potatoes, zucchini, capsicum, fennel, red onion (uaually) but you can honestly do this with anything and its a great end of week dish for left over veggies 🧡 Coat your veggies in some olive oil & sprinkle the rub over giving it a good mix 🧡 Do the same to your chicken and place on top. Expert Tips, Variations & FAQ's
- I don't usually add foil to my tray bake but because of the rub and containing sugar it burns at a quicker rate so covering it will help you
- If you take the chicken out first, make sure you cover it in the foil. This keeps it warm while the veggies continue to cook. If your veggies are cooked to your liking though you can remove them all together
- The juice/sauce in the base of the pan makes a delicious sauce on top
- You can honestly use any veggies you like for this one, it makes for a great meal to cook at the end of the week when you have a bunch of random veggies left in the fridge.
- If you want to make this smaller or one serve simply just put 1 piece of chicken and less veggies. The same if you want to make it bigger just double, triple the recipe etc.
- It makes for great leftovers though too.
- If you find part way through the veggies need a bit more oil just add some in as it is cooking
