These homemade slow cooked baked beans are a regular in my house. I use them all the time for burrito bowls, but they are also great at breakfast with an egg or as a side to a dish. They are easy to make and the best thing is that it is made in a slow cooker so you can pop it on and come back to it later. It is also easily customisable, I regularly change up the herbs depending on what I have on hand.

These Baked Beans are so versatile, use them for breakfast on toast with some poached Eggs or use them for burrito bowls (my personal fav). Packed with flavour and easy to make
Ingredients

3 Tins of Cannellini Beans

1 Diced Onion
-
3 Gloves of Garlic crushed
-
2 Rashes of Bacon Chopped
-
1 Jar of Passata
-
1 Tin of Whole Peeled tomatoes chopped

1 Tsp of Paprika
-
2 Tsp of Mixed or Italian Herbs
-
1 Lemon Juiced
-
Salt and Pepper to taste

Olive Oil to brown onions
Directions
Dice your onions and start to brown them off in your slow cooker on sauté with a little bit off oil and the crushed garlic. If you don’t have this option on your slow cooker do this in a fry pan if using a fry pan have the heat on medium, so it doesn’t burn. While that is starting to brown chop your bacon into small pieces and once your onions have started to slightly brown add in the bacon. I don’t add more oil as the oil from the bacon cooking is enough but if yours is sticking you can add more in. Cook until both the onions and bacon have browned but not burnt. I use High Saute option on mine but it’s not too super hot to burn it as its the slow cooker
Turn the sauté option off and add your passata, beans, tin tomatoes, herbs, ½ the lemon juiced and salt and pepper. If using a frypan for the onions/bacon add this mix into the slow cooker too.
Don’t add any water or stock as it will become soupier and runnier, you can add a tiny bit to your passata bottle to get the rest of it out but only a small amount. You don’t want to add liquid.
Give it a really good stir, I use a spatula so it doesn’t scratch but you want to mix all the onions etc around too so make sure you get the bottom as well
Pop on to slow cook high for 4 hours and leave it to do it’s magic.
Once it has finished, I like to taste and usually add the remainder of the lemon and a good dash of salt and some pepper, salt brings out flavour so don’t be afraid to add it but taste as you go so it’s not too salty
Eat straight away, I add mine to a burrito bowl as the main protein. It is delicious and very filling as well

Recipe Note
- This freezes really well pop it into individual portions in airtight containers into the freezer for up to 3 months
- This will last a couple of days in the fridge but I just freeze it right away if I am not using it
- You can really make this your own, I sometimes switch my herbs up depending on what I have. I might add Rosemary, Oregano etc. I also add Chilli in mine but you don’t have to. This would also be delicious with a smoky paprika.
- This is a great one to pop on in the morning for dinner that night ready to go.
